About the Recipe

Ever wonder what to make for a tasty fast meal on the weekdays? Something that won't take several dishes to make? This Thai Curry Chicken is a mouth-watering dish that even my 5-year old loves (warning, mild spice must be appreciated by young children)!

Ingredients

  • 1 - 1 1/2 lbs. chicken breast (chicken thighs also works well)

  • 1 jar Trader Joe's Red Thai Curry sauce

  • 1 red bell pepper

  • 1 yellow bell pepper

  • 1/2 yellow onion

  • 2 T olive oil

  • 1 - 1 1/2 c dry jasmine rice

  • optional: 1 orange bell pepper

Instructions

Step 1: Cook Rice


Bring a pot of water to boil using a 2:1 ratio water to jasmine rice. Boil for 20 minutes or to the instructions of your package.


Step 2: Chop vegetables

Before working with the chicken, take your bell peppers and onion to begin prepping. Chop bell peppers to 1-inch size pieces. Take your onion and slice in half if it is whole, otherwise, slice large half moon pieces, then slice again in half.


Step 3: Chop chicken

Chop chicken into bite sized pieces 1-2 inches.


Step 4: Cook chicken

Turn stovetop to medium heat and add 1 T olive oil. Add the chopped chicken and stir occasionally, cooking for 5-7 minutes. Add additional 1 T olive oil if needed. Cook until chicken is mostly cooked through.


Step 5: Add vegetables


Add vegetables and stir over fire for 2-3 minutes.


Step 6: Pour in sauce

When vegetables are warm and partially cooked (al dente), add the whole jar of sauce to the pan. Stir vegetables and chicken until fully coated. Add 1 T of water at a time to thin sauce, if preferred.


Step 7: Serve with rice


Serve on a bed of rice with a dollop of sauce included.
